Ingredients 
1¼ cups weak (soft)
wheat flour (6½ ounces)
Generous pinch of kosher salt
Generous pinch of
¼ cups cream
Melted unsalted butter (for brushing)

Recipe 
Pour ¾ cup + 1 Tbsp. water into a large bowl. Stir in flour, salt, and sugar to form a batter.
Using an electric mixer on medium-high speed, whip cream in another large bowl until soft peaks form; fold into batter (it should be fully combined, but not over mixed).
Heat waffle iron to proper working temperature and brush very lightly with butter.
Pour in a suitable amount of batter and cook until waffle is nice and golden. Repeat with remaining batter.

The best toasties are cooked at home in an open pan, trust us!

Success is down to keeping an eye on your toastie as it cooks.

Apply pressure – but not constantly – to the top and watch the heat. The outside shouldn’t become too dark before the cheese has melted.

Embellish it with - roast tomatoes, chutneys, dill pickles, fermented vegetables, fried apples, onions or potatoes, a dollop of mayonnaise, roast pork or mushrooms, a soft layer of cream cheese for richness

Be generous with the cheese and keep a napkin handy when you devour.
