Apply pressure – but not constantly – to the top and watch the heat. The outside shouldn’t become too dark before the cheese has melted.
Embellish it with - roast tomatoes, chutneys, dill pickles, fermented vegetables, fried apples, onions or potatoes, a dollop of mayonnaise, roast pork or mushrooms, a soft layer of cream cheese for richness
Be generous with the cheese and keep a napkin handy when you devour.
